Frugal Foodie: Fulfill your sweet-tooth with peanut butter cookies

Have you been on the social media application TikTok lately? Have you seen all the videos of drool-worthy, delicious desserts and do you immediately crave them? Crave no longer! A trendy and yummy dessert to hop on right now is peanut butter cookies! With an easy recipe too, how could this get any better?

Ingredients:

∙      1 and 1/2 cups all-purpose flour

∙      1/2 teaspoon baking soda

∙      1/4 teaspoon salt

∙      1/2 cup unsalted butter, softened to room temperature

∙      3/4 cup light brown sugar

∙      1/4 cup granulated sugar

∙      3/4 cup creamy peanut butter

∙      1 large egg room temperature

∙      1 teaspoon vanilla extract

∙      3 tablespoons granulated sugar (optional)

Instructions:

1.      Preheat oven to 350 degrees Fahrenheit. Line two large baking sheets with parchment paper and set aside.

2.      In a large mixing bowl, whisk together the flour, baking soda and salt. Set aside.

3.      In another large mixing bowl cream together the butter, brown sugar and granulated sugar for one to two minutes with an electric mixer until well combined.

4.      Add in the peanut butter and continue mixing. Mix in the egg and vanilla extract until fully combined. Gradually add in the dry ingredients and mix until the ingredients are combined.

5.      Place the three tablespoons of granulated sugar in a small bowl. Using a cookie scoop, scoop the dough from the bowl, roll it into a ball and coat the ball in the granulated sugar. Place each ball of cookie dough on the prepared baking sheets, making sure to leave a little room between each one. Gently press down with a fork on the top of each cookie to make a small crisscross pattern.

6.      Bake for 10 to 12 minutes or until the tops are set. Remove from the oven and allow to cool on the baking sheet for 5 to 10 minutes, then carefully transfer to a wire rack to finish cooling.
