College students often find themselves trying to plan their next meal. Some students get tired of the basic salads they resort to, the dining hall food they frequently eat or the moldy pasta they want to avoid that has been sitting in their fridge for a few weeks.
A tasty and quite easy meal to have, that requires very minimal advanced planning, is a spinach feta grilled cheese sandwich. This meal is cost-effective for college students, which is good for budgeting, and takes 30 minutes to make from start to finish.
The ingredients for this upgraded sandwich include:
1. 1/2 Tbsp olive oil
2. 1 clove of garlic
3. 1/4 lb frozen cut spinach
4. Pinch of salt and pepper
5. 2 ciabatta rolls
6. 1 cup shredded mozzarella cheese
7. 1 oz feta cheese
8. Pinch of red pepper flakes (optional)
The instructions on how to put the meal together are as follows:
9. Mince the garlic and add it to a skillet with olive oil. Cook over medium-low heat for one to two minutes or until it begins to soften. Add the spinach and turn the heat up to medium. Cook for about five minutes or until heated through and most of the excess moisture has evaporated away. Season with salt and pepper.
10. Cut the rolls in half. Add about 1/4 cup of shredded mozzarella and 1/2 oz. of feta to the bottom half of each roll. Split the cooked spinach between the two sandwiches and top with a pinch of red pepper flakes and 1/4 more of the shredded mozzarella on each.
11. Place the top of the roll on the sandwiches and transfer them to a large non-stick skillet. Use a large pot filled with a few inches of water to create a weight to press the tops of the sandwich down like a panini press. Put the heat on medium-low and cook until the sandwiches are crispy on the bottom. Carefully flip the sandwiches and place the weighted pot back on top. Cook until the roll is crispy on the other side and the cheese is melted.
This meal is especially beneficial to eat with such cold weather outside. It is warm and gooey, and oh-so-yummy!
