Kebabs, sandwiches, stir-fry, oh my!

On Sunday March 18, Campus Auxiliary Services unveiled Fusion Market, its long-anticipated dining area in the College Union. Offering a variety of international foods, Fusion Market welcomed eager students during its opening week.

The diverse foods presented might overwhelm you, so take your time browsing and note the divisions within the market. First is Clio’s, which offers an array of sandwiches named after famous writers. Two favorites include the Victor Hugo – honey-glazed ham, Brie, oven-roasted tomatoes and Dijon mustard – and the vegetarian Valmiki – sweet and spicy green apple curry and roasted tofu on a crispy baguette. Gluten-free rolls are available upon request.

The next station, Marrakech, will undoubtedly satisfy your craving for gyros and grilled kebabs. Servers present you with a choice of flatbread, basmati rice, chicken tikka masala, or roasted red potatoes with a touch of mint and roasted cherry tomatoes in a gyro with lettuce and homemade tzatziki sauce.

Based on traffic, Lotus seems to be the most popular segment of Fusion Market. At Lotus, students design their own stir-fry dishes. Students may choose from a variety of add-ins such as vegetables, roasted meats, tofu, Udon and yakisoba noodles, white or brown jasmine rice and sauces such as teriyaki, lemongrass coconut sauce, curry, spicy ponzu or savory vegetable broth. Students can top the stir-fry with mint, cilantro or fresh hot chili peppers, and sauces like sriracha and hoisin.

The most dynamic section, World Market, alternates every day between Vietnamese pho, fish tacos, Mediterranean lettuce wraps, mole burritos and Godzilla dogs: a grilled white hot dog topped with homemade kimchee and spicy mustard. From 2:15 to 5:15 p.m., World Market offers Fusion’s homemade boba milk tea. The development of Fusion Market was an immense project for CAS, as much time was devoted toward establishing a delectable and efficient eatery. Executive Chef Jonna Anne said CAS’ intention with Fusion Market was “to bring what the students are looking for.”

“We combined ethnic food with street style,” Anne said. After many student surveys, discussions within the CAS Student Advisory Board and cooking demos in residence halls, students can now experience a blend of cultures with the various venues at Fusion Market.

Fusion Market is open weekdays 11 a.m. to 9 p.m. and Saturday and Sunday from 2 p.m. to 9 p.m.
