Frugal Foodie: Hopping on the banana bread train

Being stuck inside can be boring and stressful.  Destress and learn something new by trying this gluten-free chocolate chip banana bread!

Ingredients

∙      2 cups Bob’s Red Mill gluten-free flour

∙      4-5 very ripe bananas (mashed)

∙      1/2 cup sugar

∙      1/2 cup butter

∙      2 eggs

∙      2 tablespoons milk

∙      1/2 teaspoon vanilla

∙      1 teaspoon baking powder

∙      1 teaspoon baking soda

∙      1/4 teaspoon salt

∙      1 cup chocolate chips

Directions

1.      Preheat oven to 350 degrees Fahrenheit and lightly grease a 9-by-5 loaf pan.

2.      Combine flour, baking soda and salt into a large bowl, then set aside.  In another bowl, cream together butter and sugar. Then, stir in the eggs, milk, vanilla and mashed bananas until it is well blended. Stir the banana mixture and chocolate chips into the flour mixture until moistened. Pour batter into the loaf pan.

3.      Bake in the oven for 50-55 minutes, until an inserted toothpick comes out clean. Let the loaf cool in the pan for 15 minutes and allow it to cool on a wire rack for 30 minutes before serving.
